Wow......
So - who would you say are the top 5 tappers out there? I'm guessing Trey Gunn is in the top 5, but who else?

to 'tapping' instrument tappers:
Trey Gunn -
IMHO one of today's most inovative artists. I can listen to the title-track of ConstruKtion everyday and never cease to be amazed. This guy just 'brings it'.
Stanley Jordon -
Brought guitar tapping into the 'serious music' mainstream (remember 'Blind Date') YIKES!
Eddie Van Halen -
Spawned a generation of big hair shredders
Billy Sheehan -
His work with Talas and Steve Vai (David Lee Roth) set the bass world on its ear 'in the day' - I remember listening to Live Speed on Ice over and over when I was 14. I think I failed French because my head-phones.
Tony Levin -
The most recognized Stick (fair use) player and dare say the most responsible for the early acceptance of specialty tapping instruments.

My view is too limited. I've never heard any of the artists on William's list, except that I do have a Stanley Jordan CD. He is astonishing.
The only touch/tap player I have ever seen live is Bob Culbertson. A consumate player. Since I am from a fingerpicking, not a rock, background, I am, of course, partial to Bob.
