I have seen some people tap on a fretless bass but what about a fretless guitar?

I tried tapping on a fretless guitar once, and it wasn't 'happening' for me.
It just felt like no matter how hard you tap, the string didn't quite sing and ring out like it would if it was on a metal fret. That might be a useful tone for some, but it didn't do it for me. Also, the your intonation had better be PERFECT if you plan on playing anything other than single note melodies on the guitar side. 4 note chords could sound mighty out of tune if you're not really listening and concentrating, which becomes exponentially more difficult when you're playing bass at the same time with the other hand.

Let me add- I'm not saying it can't be done. Just that it's very difficult.

If on the other hand you're only playing one region at a time, the fretless/intonation aspect might be a lot easier to manage.

I've tapped on a fretless guitar(steel string electric). If you use distortion, the low strings work really well. I almost considered making a baritone fretless just for tapping.

The unwound strings don't work quite as well...
