Hi everyone.
I used to be a Shadow Electronics endorser back in the day - with MIDI.
But they have some interesting products you brave building people may want to consider. I've provided links to the relevant pages.
1. Preamp cables - Very cool for the active electronic types. No modification to the instrument needed.

2. Multi-effect preamp. Pricey, but an interesting thought. Wouldn't know how to install it on a touchstyle instrument.

3. EQ-5 Pickup. Pickup with a built-in 5 band Equalizer. Could be interesting. I have one on an electric with a piezo. I have EVERY pickup sound imaginable.

4. Transducers. For those who tap percussively on their instruments.

5. MIDI pickup. I used LOVE this thing. Yes, a little klunky - but completely accurate. One of the fastest, but not really known about MIDI pickup systems. Absolutely killer. Program change right on the unit, etc. A little pricey too. Don't remember it being that much. But the benefit is that you go straight to your MIDI tone module - the converters are all inside the unit.
